Australian Crunch, Honey Nut Squares and Millionaires Shortbread

Honey Nut SquaresFinally I made Rice Crispy Squares. It's one of those things I've always wanted to make, my previous attempted to melt marshmellow into a liquid have always failed.

I think maybe it was I had the heat too high, or a non-Teflon coated pan, or just the fact I didn't use any butter that caused it to stick originally, but this time I didn't, infact the opposite stick to itself in a big clump at times.

I had some Honey Nut Cornflakes left over from the Australian Crunch, so rather than using Rice Crispies, I used cornflakes. It still worked out quite well, and the honey gave them an extra kick in the taste.

Extremely addicted, if not a bit too chewy, I did go a little overboard with the amount of marshmallows I added to the mixture.

Ingredients

1/4 cup margarine or butter
54 marshmallows
6 cups Rice Krispies

Directions

- Butter a 9x13 pan (or use baking parchment).
- Melt margarine or butter in a large saucepan over low heat.
- Add marshmallows and stir constantly until they are all completely melted.
- Remove from heat.
- Add Rice Krispies and stir carefully until completely mixed with the melted marshmallows.
- Use a buttered spatula or waxed paper and press the mixture evenly into the pan.
- Let squares cool.
- Cut into 24 2x2 squares.
